A Taste of Cuba May Soon Be Coming to Merchant’s Square
A new restaurant project appears to be taking shape at 110 North Henry Street in Merchant’s Square, the former home of Saladworks and previously Hair of the DoG Bottle Shop, and it looks like Williamsburg may soon be getting a second location of K’Bolá Cuban Restaurant & Bar.

Construction activity is already underway inside the historic brick building, with permits posted for restaurant renovations and a commercial kitchen installation. ABC license notices identify the future business as K’Bolá Cuban Restaurant & Bar.
The story behind K’Bolá is rooted in friendship, perseverance, and Cuban heritage. Founders Mario Casado, Lisseth Borrego, and Erbelio Ramos first worked together in Camaguey, Cuba before eventually bringing their culinary vision to the United States. Their current Williamsburg location in New Town has developed a loyal following for authentic Cuban cuisine and hospitality.

You can learn more about their current restaurant and menu here:

If the Merchant’s Square location mirrors the New Town menu, diners can likely expect favorites such as:
- Cubano sandwiches
- Lechón Asado
- Ropa Vieja
- Vaca Frita
- Mojo-marinated steaks
- Garlic shrimp
- Cuban-style lobster
- Yuca fries and stuffed tostones
Merchant’s Square already offers a fantastic collection of restaurants, coffee shops, and taverns, but there is currently nothing quite like a full Cuban restaurant experience in the district. The combination of authentic Cuban cuisine, outdoor patio seating, and a prime downtown location could make this one of Williamsburg’s more unique dining destinations.
No official opening date has been announced yet, but work appears to be moving forward. I’ll continue keeping an eye on the project and share updates as more details become available.
Have you tried K’Bolá’s New Town location? If so, what’s your favorite dish?
