Owner of Amber Ox, Precarious Beer Project is cooking up something new in Williamsburg

Residents and visitors of Williamsburg have something new to look forward to in 2021: an artisan bakery unlike anything this town has seen before.

The Bake Shop, located in the Triangle Building, will be owned and operated by Andrew Voss, co-owner of Amber Ox Public House and Precarious Beer Project. The new bakery will feature artisan breads, crafty bagels, sweet treats, homemade pizza, local coffee and more.

According to Voss, Amber Ox has had a comprehensive bakery program since they first opened their doors in 2017. All of their bread, burger buns, crackers, biscuits and pastries have always been made in-house. However, they have run out of space and figured if they were going to have a killer bakery program, they might as well share the wealth with fellow residents of the ‘burg.

The Bake Shop will open its doors next month about 200 steps from Amber Ox’s front door. The bakery will occupy the former home of Justified Bake Shop. While no big grand opening celebration is planned, Voss has some fun initiatives in the works for when they open their doors. For instance, their Buy a Loaf, Give a Loaf program will donate a loaf of bread to those in need each time a customer purchases a loaf of their own.

Until now, Williamsburg hasn’t had one true artisan bake shop where you can walk in, know the baker, and see the breads baking. The Bake Shop will be that place, where you come in the front door and you are steps away from it all.

The idea for The Bake Shop has been brewing for some time, but when the COVID-19 pandemic hit Voss decided to hit pause on the project. The opportunity to take over Justified’s space and bakery equipment presented itself a few months ago, and the business partners jumped at the opportunity.

According to Voss, the focus of The Bake Shop will be bread products. While they will have select sweets, that won’t be the focus of the bakery. “We will have some funky, old-world style sourdough and a really killer bagel and coffee program,” says Voss. “When we first open we will have breads and bagels with various schmears, smoked salmon, and an awesome coffee program where we feature different local roasters on a rotating basis. We want people to be able to roll in in the morning and grab a bagel with lox and a large cold brew and be out the door, all while spending only about $10.”

The morning program is sure to be a town-pleaser, but Voss has plans for an evening program as well. Originally from Michigan, he has a passion for Detroit-style pizza pie, which Voss describes as rectangular, deep dish, buttery, crusty and salty. Five days a week they plan to operate a pizza shop out of the bakery. The pie supply will dictate when the bakery closes for the day. The Bake Shop will be open six days a week beginning at 7am until the pizza sells out.

When it comes to juggling his businesses, Voss jokes that it takes “a healthy dose of insanity and lack of sleep.”

“It’s a true testament to the quality of people we have working for our company,” he says. “We are blessed with some amazing restaurant, hospitality and brewery professionals. My burden is not on running the operations as much as providing opportunities for my team to continue their own personal growth.” Voss says this new endeavor is community-driven, and that the biggest thing they want to do is provide a space where Williamsburg residents can get really fantastic baked goods consistently and often. They also plan to roll out an online ordering system and offer curbside service, even after the pandemic (finally) comes to an end.
